This is inspired by that Italian classic papa al Pomodoro, a super-simple, rustic soup that celebrates the wonderful flavor of ripe seasonal tomatoes.

Yield: 5 portions

Ingredients

Tomatoes soup

  • 1 kg of tomatoes (preferably cherry)

  • 1 red onion

  • 1 bulb of garlic

  • 250-300 ml chicken broth (or vegetable or water)

  • 100 ml cream (optional - can be replaced with MORE broth)

  • 45ml olive oil

  • fresh basil

  • salt

  • favorite spices

  • pepper

Instructions

We put the tomatoes on a baking sheet, cut the red onion into 1/4, and put it on a baking sheet. Add your favorite spices, and vegetable oil, and mix. Cut off the top of the head of the garlic and place the cut side up in a baking dish.

Salt is put in the oven for 35-40 minutes at 180С degrees.

Vegetables should have a fried edge in places (see photo)

To obtain a broth, you can boil chicken bones, you can dilute a famous brand of "chicken cube" with some water, can fry carrots, celery, onions, garlic, and peppercorns at a high temperature, and then boil. Or you can take just some water - in general, act to your taste. Now we squeeze the cloves out of the garlic and add the broth (you can also cream - then the taste will be VERY GENTLE - I liked it WITHOUT cream, the children WITH cream). We break with a blender. Pour into plates, and decorate with fresh basil, white bread croutons, and cherry tomatoes!
