Today, I’m sharing a simple and delicious sweet cottage cheese casserole recipe. I’ve loved these dishes since I was a child and am always searching for that perfect homemade version that reminds me of my mother’s cooking. This may not be the exact recipe from my childhood, but it’s certainly delicious! You can easily customize this easy casserole by adding raisins, berries, or anything else you enjoy.
Ingredients
- 500g cottage cheese
- 80g semolina
- 240g kefir (or sour cream)
- 5 eggs, separated
- 1 tsp baking powder
- Lemon zest
- Vanilla extract
- 20g cornstarch
- 120g sugar
Instructions
- In a large bowl, combine the cottage cheese, vanilla, sour cream, kefir, and egg yolks. Blend until smooth with an immersion blender.
- Add the semolina and cornstarch to the mixture and set it aside.
- In a separate bowl, beat the egg whites with the sugar until stiff peaks form.
- Gently fold the beaten egg whites into the cottage cheese mixture in batches, using a spatula.
- Pour the mixture into an 18 cm diameter pan.
- Bake in a preheated oven at 160°C (320°F) for about 70-75 minutes.
