Ingredients
Dough
- 160 g all-purpose flour
- 50 g rye flour
- 1 egg
- 100 g natural honey
- 40 g brown sugar
- 50 g coconut oil (can be substituted with butter)
- 1 tsp ground cinnamon
- ¼ tsp vanilla extract
- ½ tsp baking powder
- A pinch of salt
Instructions
- In a bowl, combine the egg and brown sugar. Beat the mixture with a mixer while gradually adding honey, softened oil, and vanilla extract. Sift the flour, then gradually incorporate it into the wet mixture along with baking powder and salt. Knead the honey cookie dough until smooth, wrap it in plastic wrap, and place it in the refrigerator for at least 1 hour to chill.
- Roll out the chilled honey cookie dough to a thickness of about 4 mm. Use cookie cutters to shape the dough into desired forms. Arrange the shaped honey cookies on a baking sheet and bake in a preheated oven at 160°C (320°F) for 11-13 minutes. Allow the baked honey cookies to cool completely before serving.
