Learn how to bake a delightful sandwich cookie, featuring two tender dough discs with a sweet filling nestled in between. While traditionally a filled homemade cookie, you can also prepare these delicious coconut cookies without any filling for a simpler, lighter treat!

Step-by-Step Instructions

Start by combining the milk, butter, salt, sugar, and vanilla in a saucepan. Place the pan on the stove and heat it just until the sugar has completely dissolved, then remove it from the heat.

Whisk the egg until it is smooth—you don’t need to whip it into a foam. Gradually pour the warm milk mixture into the whisked egg, stirring constantly to ensure it combines well without scrambling.

Next, add the sifted flour, baking powder, and starch. Knead everything together to form a soft, pliable dough. Place the prepared dough in the refrigerator to chill for approximately one hour.

2. Cutting and Preparing for Baking

On a lightly floured surface, roll out the chilled dough into an even layer, aiming for a thickness of about 3 mm. Using two wooden skewers as guides is a great trick to help achieve consistent thickness (see photo).

Cut out your biscuits using your favorite cookie cutters. Carefully transfer these cutouts to a baking sheet lined with parchment paper or a perforated baking mat.

Preheat your oven to 180°C. Bake the cookies for 9-10 minutes. The tops should remain light, while the bottoms will be barely browned.

Once baked, gather your filling ingredients. You will need boiled condensed milk, caramel, or dulce de leche, along with some additional coconut flakes for coating the edges.

4. Assembling Your Sandwich Cookies

To assemble your sandwich cookies, spread approximately 1/2 teaspoon of caramelized condensed milk onto the flat side of one baked cookie. Cover it with a second cookie to form a sandwich.

Gently press the halves together so the filling reaches the sides. Use a spoon to smooth out any filling that squeezes out along the edges, then immediately roll the edges in a plate of coconut flakes to coat them. Enjoy your delicious homemade treats!
