Why do I love this easy banana cake recipe? First off, it turns out incredibly moist and tasty every single time. Secondly, it is completely free of eggs and animal fats, making it a perfect choice if you are looking for a vegan treat. And thirdly—perhaps the best part—there is hardly any cleanup involved! It truly is a hassle-free, plant-based dessert to enjoy.
Ingredients for this Delicious Banana Cake
Dough for this Eggless Banana Cake:
- 290 gr flour
- 1 tsp soda
- 1 tsp cinnamon
- a pinch of salt
- 320 gr bananas (or 3 medium), ripe for the best banana cake flavor
- 210 gr sugar
- 70 ml oil
- 70 gr nut butter (I like to add peanut butter for this vegan cake)
- 90 ml orange juice + zest
- 1 tbsp vinegar
- vanilla

Instructions for Baking Your Easy Vegan Banana Cake
- Prepare Your Bananas & Oven: As with most recipes, the riper your fruit is, the better the flavor will be. Preheat the oven to 170°C (340°F) and prepare a 25x25cm baking form.
- Combine Dry Ingredients: Sift the dry ingredients (flour, soda, cinnamon, salt) together in a bowl.
- Prepare Wet Banana Mixture: In a separate bowl, use an immersion blender to grind the bananas, sugar, vanilla, orange juice, zest, and vinegar into a smooth, homogeneous mixture. Alternatively, you can mash them thoroughly with a fork if you prefer a slightly chunkier texture.
- Incorporate Fats: Add the oil and nut butter to the banana mixture, combining well with a whisk.
Substitutions for Nut Butter
- If you decide to replace the nut butter with sunflower or olive oil for a nut-free version, add 40 gr of oil instead of 70 gr of nut butter.
- If you want to use regular butter instead of nut butter, simply use it at room temperature in a 1:1 proportion.
- Combine Wet and Dry: Gently mix the dry flour mixture with the wet banana mixture using a spatula until just combined. Be careful not to overmix the batter.
- Bake Your Banana Cake: Pour the batter into your prepared mold. Bake time will vary depending on the size of your mold, but it usually takes about 35 (±7) minutes.
- If you bake the dough in a small mold (e.g., 10x25 cm) where it forms a thick layer, the baking time should be increased.
- If you pour the dough onto a large baking sheet (e.g., 40x40 cm), remember to reduce the baking time ❤️.
- Check for Doneness: Test readiness by inserting a dry toothpick into the center of the cake. If it comes out clean, your dessert is ready.
I used a large baking sheet (25x25 cm) and my thin cake was baked perfectly in 28 minutes.
