Here are the real secrets to making fluffy kefir pancakes:
- Warm up the kefir (or sour milk). I usually do this in the microwave on the “defrost” setting just until it feels warm to the touch.
Alternatively, you can warm the kefir in a water bath or simply take the sour milk out of the fridge in advance and leave it on the counter. The main thing is that the kefir needs to be at least room temperature.
If you accidentally overheat it, don’t worry—even if it curdles slightly, it won’t stop your pancakes from turning out delicious.
This is actually the most important secret.
If the dough is cold, it is highly likely that your kefir pancakes will deflate and look sad the moment you take them out of the pan. Has that happened to you before?
