Napoleon Snack Cake

It’s a delightful cross between an appetizer and a salad that is perfect for your New Year’s table! This layered tuna snack is so delicious, it’s usually the first thing to disappear from the plate. Ingredients for Your Savory Snack Cake
Layered Tuna Snack Cake

2 sheets of puff pastry (non-yeast) or 2 packs of crisp dill crackers (for the snack cake base)

100 ml mayonnaise (approximately)

1 can of canned fish (for a classic tuna snack cake, I use tuna; saury in its own juice also works wonderfully)

4 large boiled eggs

100 g hard cheese (e.g., cheddar or Gouda), grated

2 medium onions
-
2 medium carrots
Instructions for Assembling Your Layered Snack Cake

Prepare the Fillings: Start by hard-boiling the eggs and chopping them finely. Finely chop and sauté the onions and carrots in olive oil until they are soft and golden. Grate the cheese. Drain the canned fish well and flake it with a fork.
Optional Puff Pastry Base: If you decide to use puff pastry, bake it according to the package directions. Once cooled, carefully cut it lengthwise to create 4 even layers for your snack cake.
Assembling the Savory Cracker or Pastry Layers
1——— First Layer: Begin by laying out your chosen base—either a layer of crisp crackers or your prepared puff pastry sheets. Spread a generous amount of mayonnaise over the base. (For an extra flavor kick, you can optionally mix a bit of fresh dill and 1/4 clove of minced garlic into the mayonnaise). Evenly distribute approximately 3/4 of the sautéed and cooled onions and carrots over the mayonnaise.
2——— Second Layer: Place the next layer of crackers or pastry sheets on top. While I like to lightly smear each cracker layer with mayonnaise to keep it moist, you can skip this step if you prefer. On top of this base, add about 3/4 of the finely chopped canned fish, spreading it evenly to form a distinct fish layer.

3——— Third Layer: Place another layer of crackers or pastry, spreading it with mayonnaise. Evenly add the finely chopped boiled eggs (grating the eggs sometimes works nicely for a smoother texture).
4——— Fourth Layer: Add another cracker or pastry layer, again spreading with mayonnaise. This time, spread the remaining chopped canned fish and the reserved sautéed vegetables (onion and carrot) to complete the savory filling layers.
5——— Final Layer & Chilling: For the top layer of your savory snack cake, add one last layer of crackers or pastry, generously smeared with mayonnaise. To allow the flavors to meld and the snack cake to soften, cover it tightly and let it sit in the refrigerator until your guests arrive. Before serving this delightful New Year’s snack, generously sprinkle the entire cake with the remaining grated cheese.
