  1. To get started on the tiny crepes, simply combine all the ingredients—except for the boiling water—in a blender. While the blender is running, pour in the boiling water and keep mixing until everything is smooth. Just like that, your batter is ready. You can now cook these thin pancakes in a hot skillet.

If you don’t have a blender handy, you can easily do this by hand. First, whisk the eggs, sugar, vegetable oil, and salt until smooth. Gradually fold in the flour and a portion of the sour milk (or kefir) to form a thick, lump-free dough. Once that’s smooth, stir in the rest of the sour milk. Finally, pour in the boiling water while stirring constantly. Now, you’re ready to fry these homemade crepes in a hot pan.

Bonus: Cointreau Orange Sauce Recipe for Pancakes

For the delicious orange sauce, start by heating the sugar in a pan until it caramelizes. Once it melts down to a rich amber color, carefully pour in the orange juice. Let the juice simmer and reduce, then add the Cointreau liqueur. Carefully ignite it to flambé the sauce. As soon as the flame dies down, whisk in a piece of butter to thicken the mixture. This rich sauce is the perfect finish for your crepes.
