  1. Prepare Topping and Wave: First, in a small bowl, thoroughly mix the ingredients for the crunchy cake topping with a fork and set aside. In another bowl, prepare your cinnamon-sugar wave mixture by combining the sugar with cinnamon.
  2. Start the Cake Batter: For the main almond flour cake dough, mix the two types of flour (all-purpose and almond flour) with the vegetable oil in a separate bowl and set aside.
  3. Whip Eggs and Combine: In a large bowl, whisk the eggs with sugar and vanilla until the mixture is light and fluffy, which usually takes about 5 minutes. Gently fold this aerated egg mixture into the oil-flour mixture in 2-3 careful stages, ensuring the batter remains airy.
