Simple Summer Berry and Frangipane Pie
Tip: You may have some homemade pie dough left over, but don’t worry! You can roll the extra dough out thin and bake it on a baking sheet at 180°C for 20 minutes to enjoy as a delicious cookie-like sweet treat.
Ingredients
Dough
- 150 g flour
- 50 g ground almonds
- 40 g icing sugar
- 90 g butter, cubed
- 20 g cold water
- 100 g icing sugar
- 40 g cornstarch
- 90 g milk
- 4 g baking powder
- 20 g butter
- A bit of lemon zest
- 150 g berries
- strawberries, raspberries, and other -berries
Frangipane
- 150 g roasted almonds
For serving
- Almond petals (for decoration)

Before we begin baking this delightful frangipane berry pie, preheat your oven to 180°C with the fan off. Ready? Good.
Now, let’s prepare the homemade pie dough. In a large bowl, mix the dry ingredients for the pie crust, then add the cubed butter. Using your hands (or a fork), crumble the dry mix into the butter until it starts to form a mixture, then gradually pour in the cold water.
Continue mixing until you have a cohesive ball of pie dough. Transfer it out of the bowl and onto a lightly floured surface (dust with flour). If the dough seems too warm, you can refrigerate it for 20 minutes to firm up.
Roll out the pie dough to a thickness of 1 cm (or slightly thinner), then carefully place it into a 20 cm pie dish. Gently prick holes in the base of the pie crust with a fork.
Next, place baking paper over the dough, then fill with raw rice (or beans) for blind baking, and bake like this for 20 minutes. Once baked, remove the beans and paper, then continue to bake the pie crust for another 5–10 minutes, until it becomes lightly golden.

While the pie crust is baking, let’s prepare the delightful frangipane filling. In a food processor, blend the roasted almonds and icing sugar until you get a small, sweet almond crumb for the frangipane. Now, add the remaining frangipane ingredients (including cornstarch, milk, baking powder, butter, and lemon zest) and blend a few times until smooth. We don’t need a VERY SMOOTH texture for this rich almond filling.
When the pie crust is ready, remove it from the oven using oven mitts and let it cool slightly. Add the prepared frangipane filling and gently place the fresh berries inside the frangipane. Bake this delicious frangipane berry pie for another 20 minutes in the same oven.
When the pie is ready, let it cool completely. Then, decorate your homemade berry pie with additional fresh berries (as pictured) or serve it warm with custard or cream for an extra treat.
This delightful frangipane pie can be stored in the refrigerator for 3 days (if you have any left!).
