These delicious Almond Cookies are an all-time favorite for many home bakers. What makes them special is how customizable they are—you can easily swap in different nuts to suit your taste. Best of all, this simple recipe adapts beautifully into a gluten-free option without losing any of that satisfying crunch.

  1. In a bowl, beat the softened butter with sugar until creamy. Add the egg and grated orange peel, and continue beating until well combined.
  2. Gradually add the flour and baking powder, followed by the orange juice, and mix until a soft dough forms. Stir in your chosen nuts. Knead the dough gently to bring it together.
  3. Cover the dough and let it chill in the refrigerator for 15-20 minutes.
  4. Once chilled, divide the dough into 30 equal pieces.
  5. In a separate shallow bowl, lightly beat the egg white with the powdered sugar using a fork until just combined. This will serve as your glaze.
  6. Shape each piece of dough into a small ball. Dip each ball into the glaze, then roll it generously in the almond flakes until fully coated.
  7. Arrange the cookies on a baking sheet lined with parchment paper, leaving a little space between each one.
  8. Bake for 10-15 minutes at 180°C (350°F), or until they are lightly golden and the edges are set.
