Vanilla-orange loaf cake

This homemade Orange Cake is bursting with the flavor of fresh oranges. A combination of orange zest and orange juice makes this cake extra moist and flavorful.

Vanilla-orange loaf cake

Yield: 1 cake

Ingredients

For batter

  • 2 eggs

  • 150 gr sugar

  • 40 gr butter

  • 180 gr flour

  • 30 gr almond flour

  • 80 ml milk

  • 40 ml orange juice

  • zest of 1 orange

  • 60 ml vegetable oil

  • 6 gr baking powder

  • 1 vanilla pod (or vanilla extract)

To 'open' the cake

  • 20 gr butter (optional)

Glaze

  • 1 tbsp. orange juice + 2 tbsp. powdered sugar

Instructions

Cooking.

Grind the sugar with your fingers with orange zest. Beat eggs (mix with a whisk or mixer) with sugar.

Split the vanilla pod in half, collect the vanilla seeds, and add to the egg mixture. Pour milk, vegetable and melted butter there, mix, then add flour and baking powder. Mix well again (don't overdo it). Pour the batter into a parchment-lined mold.

In order for the cupcake to "open" - i.e. a beautiful hollow appeared in the center - put 20 g of butter on the surface of the dough along the length.

Bake for approx. 50 minutes at 160°C. (Check for readiness with a toothpick) Cool on a wire rack. Cover with frosting as desired.
