Vanilla-orange loaf cake

Ingredients
For batter
- 2 eggs
- 150 gr sugar
- 40 gr butter
- 180 gr flour
- 30 gr almond flour
- 80 ml milk
- 40 ml orange juice
- zest of 1 orange
- 60 ml vegetable oil
- 6 gr baking powder
- 1 vanilla pod (or vanilla extract)
To ‘open’ the cake
- 20 gr butter (optional)
Glaze
- 1 tbsp. orange juice + 2 tbsp. powdered sugar
Instructions
1. Prepare the Orange Bundt Cake Batter
First, gently grind the granulated sugar with your fingers and the fresh orange zest to really infuse the citrus flavor. In a separate bowl, beat the eggs (using a whisk or mixer) with the orange-infused sugar until the mixture is light and fluffy. Split the vanilla pod in half, scrape out the seeds, and add them to the egg mixture (you can also use vanilla extract if you prefer). Pour in the milk, vegetable oil, and melted butter, mixing well. Gradually add the flour and baking powder, stirring until just combined—be careful not to overmix. Pour the batter into your prepared, parchment-lined pan.

2. Bake the Cake and Add the Glaze
To help your cake achieve its characteristic ‘open’ top—meaning a beautiful hollow or crown appears in the center—carefully place 20g of butter lengthwise on the surface of the dough before baking. Bake for approximately 50 minutes at 160°C (325°F). Always check for doneness by inserting a toothpick into the center; if it comes out clean, your cake is ready. Allow it to cool on a wire rack. Once cooled, prepare the sweet orange glaze and drizzle it over the top for a perfect finish.
