Ingredients

Fresh Caprese Salad Ingredients:

  • 125 gr fresh mozzarella cheese
  • 125 gr ripe cherry tomatoes
  • Salt and freshly ground black pepper to taste
  • 2 tbsp homemade green oil
  • 1 tsp balsamic glaze or cream (optional)
  • Fresh basil leaves for garnish or decoration
  • (and the chef to cook it all - optional) 🤣🤣🤣
  • 1/2 bunch fresh cilantro and parsley
  • Lemon peel (from 1 fresh lemon)
  • 100 gr. high-quality extra virgin olive oil
  • Fine-mesh gauze for straining

Homemade Basil Green Oil Ingredients:

  • Large bunch of fresh basil

Instructions

  1. Start by blanching the fresh basil. Dip the leaves into boiling water for just 30 seconds, then immediately transfer them into a bowl of ice water to stop the cooking process. Once cooled, gently blot the basil on a paper towel to remove any excess moisture.
  2. In a blender, combine your high-quality olive oil, the blanched basil, and the fresh lemon peel (zest).
  3. Blend the mixture until it is completely smooth, which typically takes about 3 to 5 minutes.
  4. Strain the basil oil through 3 or 4 layers of fine-mesh gauze to get a clear liquid. You can use a clean kitchen towel as an alternative, but just be aware that it will turn bright green and can be difficult to wash clean.
  5. Your fragrant homemade basil green oil is now ready to serve. It keeps well in the refrigerator for up to one week.
