Salad with quinoa and caramelized walnuts

If there were many different and hearty dishes on your New Year's table, then you probably already want to unload your stomach with a light salad. My men (son and husband) said that this salad is an independent dish. It saturates so that no more meat is needed.

I love to eat apples no matter what time of year it is. The quinoa salad is finished with a sweet mustard dressing that pulls all of the fall flavors together. Don’t skip the dressing, I promise it is easy to make. You can whisk it up in just a few minutes.
Salad with quinoa and caramelized walnuts
Yield: 4 people
Ingredients
Salad:

60 gr spinach or other greens

1 medium apple, sliced

½ a large pomegranate seed

30 g quinoa (dry)

30 gr caramelized walnuts

50 gr goat cheese
Dressing:
-
35 gr extra virgin olive oil
-
10 g of high-quality 4% vinegar (can be replaced with 1 tablespoon of lemon juice)
-
½ tbsp honey
-
½ tsp Dijon mustard
-
fresh herbs
-
freshly ground pepper and salt (to taste)
Instructions
Caramelizing nuts
Pour 2 tbsp of sugar into a dry frying pan. Start melting the sugar over medium-high heat, shaking the pan a little. When all the sugar has dissolved, add 1 tsp of butter and all the nuts. Combine (mix) nuts with caramel. Ready nuts should be poured onto parchment and allowed to cool.
Salad
Cook quinoa according to package instructions, drain, and cool.
Sauce - Combine all ingredients in 1 jar and shake it well. The sauce is ready.
Now everything is simple. Cut the apple, wash the spinach and dry it. We spread the spinach on a plate first, then the apples and quinoa, then tear the goat cheese into pieces, and put it on a plate. We put walnuts and pomegranate seeds "pretty". 😂 pour over the sauce, the salad is ready.
