Ingredients
- 400g filo pastry sheets
- 250g Brie cheese (Camembert or similar can also be used)
- 1.5-2 pears, sliced
- 100g butter, melted
- 2 eggs
- 200ml heavy cream
- 2 sprigs of thyme
- Honey for serving
- Sea salt and freshly ground black pepper
Instructions
- Preheat and Prepare Pastry: Preheat your oven to 180°C with the fan on. Brush the filo pastry sheets generously with melted butter. Carefully layer the buttered sheets in a baking dish, placing them next to each other to form the tart base.
- Layer Fillings: Arrange slices of Brie cheese and fresh pears evenly between the layers of pastry.
- Prepare Custard Mixture: Whisk together eggs and heavy cream in a bowl, adding sea salt, freshly ground black pepper, and the leaves from the thyme sprigs. Spread this creamy mixture over the entire pastry base and fillings.
