Pear, Thyme, and Brie Tart

Yield: 1 tart

Ingredients

  • 400g filo pastry sheets

  • 250g Brie cheese (Camembert or similar can also be used)

  • 1.5-2 pears, sliced

  • 100g butter, melted

  • 2 eggs

  • 200ml heavy cream

  • 2 sprigs of thyme

  • Honey for serving

  • Sea salt and freshly ground black pepper

Instructions

Method: Preheat the oven to 180°C with the fan on.

Brush the filo pastry sheets with melted butter. Carefully layer the sheets in a baking dish, placing them next to each other.

Arrange slices of Brie cheese and pears between the layers of pastry.

Whisk together eggs and heavy cream, adding sea salt, freshly ground black pepper, and thyme. Spread this mixture over the entire pastry.

Bake in the preheated oven for 40 minutes. After baking, drizzle the tart with honey, sprinkle with thyme, and serve
