This uncomplicated and direct pumpkin cake recipe is designed for those who desire unadulterated pumpkin and spice notes without any additional distractions. While it's undoubtedly delightful on its own, you'll be delighted by the creamy and tangy cream cheese frosting that tops it off!

This is a simple in-cooking cake, so it’s pretty easy to prepare. Prepping the cake batter is easy to change to an apple cake (if you have apple pure) - don't be shy to change my recipe to your taste.

Simple Pumpkin Cake

Yield: 1 mini cake

Ingredients

Dry Ingredients:

  • 170 grams of flour

  • 40 grams of almond flour

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of baking powder

  • 1/2 teaspoon of salt

  • 1/2 tablespoon of ground cinnamon 1/2 teaspoon of ground ginger 1/4 teaspoon of ground nutmeg

Wet Ingredients:

  • 200 grams of sugar

  • 120 ml of vegetable oil

  • 210 grams of roasted pumpkin puree

  • Vanilla extract

  • 1 large egg, at room temperature

For the frosting:

  • 400 grams of cream cheese

  • 200 grams of heavy cream

  • Optional: cinnamon and nutmeg for flavor

  • 90 grams of powdered sugar

  • Orange zest

Syrup:

  • Juice of 1 orange

  • 1 tablespoon of powdered sugar

For decoration

  • Berries and cinnamon.

Instructions

Syrup:

Boil and let it cool.

Frosting - just whip together cream cheese, heavy cream, and powdered sugar, and add orange zest and spices if desired.

Instructions for making the Sponge:

Combine the dry ingredients.

Mix the sugar, egg, and roasted pumpkin puree with the vegetable oil.

Combine the dry ingredients with the wet ingredients.

Pour the mixture into two 16 cm (6.3 inches) cake pans lined with parchment paper and bake at 170°C (340°F) for 40 minutes.

Let the cakes cool, then slice them lengthwise. Soak the layers with the orange syrup as per the recipe.

Apart from the frosting, feel free to add berries between the layers or use them to decorate the cake on top.
