Soft, Berry Caramel
Ingredients

70g sugar

20g glucose syrup

80g berries (puree and heat)

10g butter

Instructions
Place the sugar in a saucepan, add glucose syrup, and melt the sugar until it reaches a beautiful caramel color. Heat the berries puree until just before boiling (do not boil). Pour the hot puree into the caramel, add vanilla, and stir. If necessary, cook on low heat until everything is combined. Remove from heat. When the caramel cools to 35°C (95°F), add the soft butter and blend with an immersion blender until smooth. Transfer the finished caramel to a container, cover with a lid, and store in the fridge for up to 30 days. The recipe yields one jar of 100-110 ml.
