Ingredients
- 70g sugar
- 20g glucose syrup
- 80g berries (puree and heat)
- 10g butter
- Vanilla
Instructions
- Place the sugar in a saucepan, add glucose syrup, and melt the sugar until it reaches a beautiful caramel color.
- Heat the berries puree until just before boiling (do not boil).
- Pour the hot berries puree into the caramel, add vanilla, and stir. If necessary, cook on low heat until everything is combined. Remove from heat.
- When the homemade berries caramel cools to 35°C (95°F), add the soft butter and blend with an immersion blender until smooth.
- Transfer the finished berries caramel sauce to a container, cover with a lid, and store in the fridge for up to 30 days. This berries caramel recipe yields one jar of 100-110 ml.
