Typically, Financiers—delightful French pastries—are baked in small rectangular molds so the finished treats resemble gold bars. Legend suggests these rich, buttery, and nutty cakes gained popularity in the financial district of Paris, known as La Bourse du Commerce. That location is precisely where they earned their iconic name, cementing their status as a classic French dessert.

Financier Batter Ingredients
- 150 grams of butter
- 150 grams of egg whites (approximately from 5 eggs)
- 100 grams of powdered sugar
- 75 grams of flour
- 75 grams of nuts + 25 grams more for decoration (for the nutty Financier topping)
- A pinch of salt
Instructions to Bake Financiers
- To prepare the brown butter for your pastries, heat the butter over medium heat until it turns deep golden. When brown specks form at the bottom and the butter acquires a distinct nutty aroma, it is ready. Remove it from the heat and set it aside to cool slightly.
- In a separate bowl, beat the egg whites with powdered sugar and a pinch of salt until stiff peaks form.
- Process 75 grams of nuts in a food processor with wheat flour until it reaches a consistency almost like flour, creating a fine nut flour mixture.
- Combine the cooled brown butter with the nut and flour mixture. Gently fold in the beaten egg whites in two additions to form your smooth batter.
- Fill the molds with the batter (this recipe is enough for about 12 molds). These molds will give the cakes their signature rectangular shape.
- Bake your homemade treats at 175 degrees Celsius for about 20 minutes, or until they are golden brown.
