"Financier" is a small biscuit pastry that is a classic in French cuisine. Typically, Financiers contain nut flour (crushed or ground almonds, but other nuts can be used – for example, I liked the taste of Financiers with hazelnuts). Financiers have a unique feature that sets them apart from other biscuit products – it's beurre noisette – browned (or if you prefer - toasted) butter until it develops a nutty aroma and the color of the butter becomes slightly brownish. Another essential part of Financiers is egg whites, powdered sugar, and flour.

Most often, Financiers are baked in a rectangular shape, and the finished products resemble gold bars. History has it that these pastries became popular in the financial district of Paris – La Bourse du Commerce, which is where they got their name.
Financier

Ingredients
Batter for Financier

150 grams of butter

150 grams of egg whites (approximately from 5 eggs)

100 grams of powdered sugar

75 grams of flour
-
75 grams of nuts + 25 grams more for decoration

A pinch of salt
Instructions
Heat the butter over medium heat until it turns brown. When brown specks form at the bottom, and the butter itself acquires a nutty aroma – it's ready! You can remove it from the heat. Set it aside to cool down and continue.
Beat the egg whites with powdered sugar and a pinch of salt until stiff peaks form.
Process 75 grams of nuts in a food processor with wheat flour until it's almost like flour.
Combine the buttery part with the flour mixture. Add the beaten egg whites in two additions.
Fill the molds with the batter (I have 12 molds).
Bake at 175 degrees Celsius for about 20 minutes.
