Tiny crepes recipe in cups

A quick and easy meal, pancakes are the perfect addition to a breakfast, brunch, or even dessert table! I have a recipe in grams, but if suddenly for some reason - you didn’t have scales at hand - use this recipe to make your pancakes perfect.

A small amount of sugar gives the pancakes a golden appearance and crispy edges. When they're ready, add your favorite toppings like fresh fruit, whipped cream, or even savory options.

Pancakes are a great opportunity to get creative with different combinations of flavors.

Tiny crepes recipe in cups

Yield: 20 pieces

Ingredients

Tiny crepes dought

  • 2 eggs

  • 2 tbsp sugar

  • 3 tbsp vegetable oil

  • a pinch of salt

  • 1 cup sour milk (or kefir)

  • 1 cup flour

  • 1 cup boiling water

Orange sauce for pancakes

  • 120 gr sugar

  • 150 ml orange juice

  • zest of 1 orange

  • 20 ml Cointreau liqueur

  • 50 gr butter

Instructions

Mix everything except boiling water in a blender. Add boiling water - continuing to whisk. Ready. Can be baked in a hot pan.

If there is no blender, then first mix the egg, sugar, and vegetable oil, salt - until smooth. Then we add all the flour and part of the kefir (I do not add all the liquid at once - so that there are no lumps - first we make a thick dough without lumps, then we make it liquid). Mix until smooth, when it turned out - add the remaining kefir, and mix. Add boiling water while stirring constantly. Fry in a hot pan.

BONUS

Orange sauce for pancakes

For the sauce, heat sugar in a pan until caramelized. Once it melts and turns a caramel color, add the orange juice. Evaporate the juice, add the Cointreau liqueur, and gently set it on fire. As soon as the liquor burns out, tighten the sauce with a piece of butter.
