Russian raspberry-curd Easter

In many countries of the world, such a dish has not even been of heard. When I talk to native Bulgarians about such dishes as casserole or cottage cheese Easter or curd pancakes, they ask with horror, are you sure that cottage cheese can be eaten with sugar? It's terrible... But still, some of my Bulgarian friends, having tried my casserole, say - but it's delicious !! I didn’t let anyone try Easter, I ate everything myself. But if suddenly you live in Bulgaria and you have access to delicious cottage cheese - I invite you to experiment!

Paskha is a sweet dish of quark (curd cheese) which, according to the Russian tradition, is prepared only once a year for Easter. The custom of preparing Easter curd pudding is known in the central and northern regions of Russia. Paskha is a very hearty dessert. It is usually spread on a piece of Easter bread, kulich, with a spoon.

Ingredients

Russian raspberry-curd Easter

  • 600 gr cottage cheese 5-9%

  • 150 gr raspberries

  • 1 tsp starch

  • 100 gr fat sour cream (or cream)

  • 50 gr sugar

  • 100 gr butter

  • 100 gr "white" chocolate

  • 2 yolks

Instructions

Mix sour cream, yolks, and sugar with a whisk. Bring to a boil over low heat stirring, and boil for 30 seconds.

If the berries are frozen, drain off excess liquid. Puree the berries, add a teaspoon of starch to them, transfer to a saucepan, bring to a boil over low heat, and boil for 1-2 minutes. Remove from heat, add chocolate to raspberries, and stir.

Punch the cottage cheese with butter, add the custard part (raspberries and chocolate) and creamy yolk, beat again with a blender, and mix.

Moisten gauze slightly with boiled water and squeeze well. Cover the form with gauze in several layers. Lay out the curd mass, smooth it, close the gauze edges and put the load on top.

Put the mold on a plate into which excess liquid will drain. Remove the form for 12 hours in the refrigerator. After carefully removing, decorate with chocolate as desired ❤️
