This milk bread recipe is for those who love simple yeast baking but understand that quality should not suffer! This recipe without sourdough is made with regular dry yeast. I added beetroot powder, but again, this is not necessary. Below I will write options than to replace it.

Instructions
Beetroot powder - this is beetroot dried in a dehydrator, and ground into powder - you can not add it, you can replace it with turmeric or cocoa. I bought it at the clean food store ZOYA.BG
Let's start!
In a stand mixer fitted with a dough hook, combine all ingredients except oil and salt. Knead until it comes together into a ball of dough. Add butter. Knead until thoroughly mixed into the dough and mix for another 5 minutes. Pinch off a small piece of dough - gently stretch the dough in opposite directions so that it resembles window glass without tearing - this will mean that the gluten is sufficiently developed. If not, continue kneading for another 3-5 minutes and do another gluten window test. The video shows the last minute of the kneading.
Divide the dough into 2 parts. Add beetroot powder to 1 part of the dough, and mix until smooth. Place both doughs in 2 containers and let stand in a warm place (this time I did the proofing in the microwave - just put 1 cup of boiling water along with the dough - close the OFF microwave and leave) for 50-60 minutes. Roll out both doughs (or stretch with your hands) into 2 rectangular layers. Before rolling out - I spray both the table and hands with vegetable oil. Fold the dough on top of each other, as shown in the video, and twist it into one roll, securing the ends. Prepare a baking dish. Place the "roll" seam side down in a baking dish. Cover from winding with a "hat" and leave in a warm place for 45 minutes-1 hour, until the dough reaches 90% of the volume of the mold. I spray the dough with a mixture of honey and water - as shown in the video from a small spray bottle. Then I sprinkle seeds on top and make cuts - and as you understand - all this is unnecessary. We bake bread in an oven preheated to 180 ° C for about 30-35 minutes.
