Simple and fast honey cake

Fragrant honey cakes with sour berries and cream cheese... A delicious and beautiful dessert for a small homemade tea party!
The weight of this cake will be only about 700-800 grams. Therefore, you can easily eat it even if you have a small family) But feel free to increase the number of ingredients - to make the cake bigger - it really tastes good.

I want to highlight, that you can cut the dough in any shape - apple or unicorn, circle or rectangle, and even a number. Great idea for someone's birthday to have his own age cake. A honey cake filled with cheese cream insertion of fruit or berries and decorated with strawberries, raspberries, blueberries, and pieces of chocolate - what can be better?

Simple and fast honey cake

Yield: 1 cake

Ingredients

For the batter:

  • 45 gr honey

  • 75 gr sugar

  • 1/2 tsp soda (no hills 😉)

  • a pinch of salt

  • 60 gr butter

  • 1 egg+1 yolk

  • 200 gr flour

Cream with mascarpone

  • 300 gr cream cheese

  • 120 gr cream 33%

  • lemon zest (optional)

  • vanilla

  • 60 gr powdered sugar

Instructions

Honey cakes

Boil honey with sugar in a saucepan. Add salt and soda, the mass will begin to foam. Wait for a bright red color, and remove from heat. Add butter, and stir until dissolved Then add the egg and yolk, and mix until smooth. Add flour and refrigerate for 1 hour. The diameter of the cakes is 14 cm. The number of cakes will vary depending on the thickness of the dough.

Bake in the oven at 170 gr for about 12 minutes. Before assembling the cake, the cakes must cool.

For the cream

Beat everything until smooth (this is about 30-40 seconds with a mixer)

Cake assembly

We put a drop of cream on the bottom of the plate so that the cake does not slip. Next - spread the cream with BEADS from the cream around the perimeter of the cake. Berries sourness is perfect for this cake. Feel free to add raspberries or sour berries or fruit cremeux.
