Lacy crepes recipe whit sourmilk

Sour milk crepes are the tiniest you could have, made with a homemade version of buttermilk / sour milk or any vegan milk - they will be tasty anyway! Baking soda work to give these pancakes a lot of nice holes on the surface, and they are fantastic!

This simple but delicious crêpe recipe can be made in minutes from ingredients that everyone has on hand.

Yield: 25 crepes
Ingredients
Tiny crepes dought

250 ml of kefir (or milk or sour milk or vegan milk)

2 chicken eggs

2 tbsp vegetable oil

2 tsp sugar
-
1/2 tsp soda
-
a pinch of salt

150 gr flour

250ml BOILING water (I used this time boiling milk)

Total - eggs, salt, and sugar, and beat with oil until smooth (you can cook even in a blender or mix with a whisk; you can also use a mixer). To this mass add the sour milk and all the flour and soda, and mix until smooth. (The batter will be pretty thick.)
Whisking vigorously, add boiling water. The dough is slightly thicker than milk.
We bake pancakes in a non-stick frying pan, brushing 1 tsp of oil before the FIRST pancake. Warming up the stove for 7-8 out of 9. (again depends on your skill with hot pancakes)
Secrets and Fixing issues
If SUDDENLY, after you have already fully prepared the dough, you baked the first 3 pancakes from it - you want to add flour for some reason - then in no case add it directly to the finished dough.
Because of this, the dough will not become thicker, but lumps will appear. In order to introduce flour into the dough, you need to take a mug, put flour in it (the same 20 grams), pour 4 tablespoons of ready-made dough into the mug on top, and stir. Add 4 more tablespoons of dough, and stir until smooth. And then this liquid homogeneous mass from a mug is mixed with a more liquid dough.
