  1. To prepare the vegan cream cheese frosting, just whisk all the ingredients together.

Next, preheat your oven to 180°C. In a mixing bowl, combine the fresh orange zest with the sugar. A great trick is to rub the zest into the sugar with your fingers—this technique releases the natural oils and ensures the orange gives an even more vibrant flavor. Then, add the fresh orange juice, almond milk (or your preferred plant-based milk), the remaining sugar, vanilla, and a pinch of salt to the mixture.

Stir the wet ingredients thoroughly and set them aside for a moment. Sift the baking soda, flour, and baking powder directly into the liquid mixture. Add the poppy seeds and stir with a whisk just until the batter is smooth and well combined.

Pour the batter into your molds—this recipe fills about 6 standard molds. Bake for approximately 45 minutes, or until they are golden and cooked through. The resulting muffins are incredibly tender, moist, and boast a rich, authentic orange flavor.
