You must have come across all sorts of muffin recipes on the internet with all sorts of ingredients. Give in to the temptation to make this vegan poppyseed cake and you won't be disappointed.
Orange poppy seed muffins (vegetarian)
Yield: 6 muffins
Ingredients
Muffin dough

zest of 2 oranges

110 gr orange juice (juice of approx. 2 oranges)

110 grams of milk (I used an almond one. You can replace it with orange juice or water)

60 gr sugar

150 gr flour
-
vanilla
-
a pinch of salt

1/2 tsp soda
-
1/2 tsp baking powder

20 gr poppy seeds
-
(I also used almond flakes for garnish)
Cream cheese frosting for "hats"

200 gr cream
-
300 gr cream cheese
-
75 gr powdered sugar
-
vanilla
-
2 tbsp lemon juice
Instructions
To prepare the cream - just whisk all the ingredients.
We set the oven to 180*С We mix the orange zest with sugar and rub them additionally - so that the orange gives even more flavor. Add orange juice and almond milk, sugar, vanilla, and a pinch of salt to the sugar.
Stir, and leave aside. Sift soda, flour, and baking powder, pour into the liquid part, add poppy seeds, and stir with a whisk until smooth.
I baked in 6 molds for about 45 minutes. The cake is tender, moist, with a rich orange flavor.
