Some say it's impossible to get fat from Italian pasta and pizza! But while I'm on vacation in Italy - I will try very hard 🤣

Caprese salad
Yield: 2 portions
Ingredients
Caprese salad:

125 gr mozzarella cheese
-
125 gr cherry tomatoes
-
salt/pepper to taste

2 tbsp green oil
-
1 tsp balsamic cream (optional)

basil leaves for decoration

Green oil

bunch of basil
-
1/2 bunch of cilantro and parsley
-
lemon peel
-
100 gr. the best olive oil

Gauze for straining
Instructions
Dip the basil in boiling water for 30 seconds. And immediately into the ice water. Then on a paper towel, blot from excess moisture. We combine olive oil, basil, and zest in a blender. We break through 3-5 minutes. We filter through 3-4 layers of gauze (you can also sift through a clean towel, but the towel's color will be bright green and then you will have to try to wash it). The oil is ready. It can be used for up to 1 week and stored in the refrigerator.
