I eat these crackers for breakfast with kaymak (cream cheese or Philadelphia) and smoked salmon. The kids love taking them to school.

Yield: 1 backing tray

Ingredients

Perfect crackers

  • 120 g of whole flax seeds (not ground)

  • 50 g of hemp seeds

  • 50 g of spelt (optional or oatmeals flour)

  • 3 tablespoons (about 30 g) of chia seeds

  • 160 ml of hot water

  • 50 g of sunflower seeds

  • 50 g of pumpkin seeds

  • 20 g of black sesame seeds

  • Salt

Instructions

Preheat the oven to 180°C (356°F). Mix the flax seeds, chia seeds, and water, and leave for 5 minutes or until the mixture turns into a thick gel. Add the remaining seeds and stir until uniform. Line a baking tray with parchment paper (if desired, you can grease it with olive oil, but nothing sticks to my paper so I don't do this). Spread the seed mixture evenly on the tray in a thin layer. Optionally, brush the top with olive oil (this helps create a crispy crust). Bake for about 35-40 minutes until the cracker is evenly golden (it can be slightly darker around the edges, but don't let it get too dark). Let it cool completely and harden before breaking into pieces.
