Carrot candies without sugar

Yield: 20 pc.

Ingredients

  • 150 g of carrots (grated finely)

  • 200 g of sugar-free dates (can be substituted with dried cranberries and orange zest OR dried apricots without fructose coating – all three options are loved by my family)

  • 110 g of walnuts

  • 1 tbsp chia seeds

  • 35 g of dry coconut flakes

  • 1/2 tbsp cinnamon

  • 1/4 tbsp nutmeg

  • a pinch of salt

  • another 30-35 g of flakes (or black or white sesame) for coating

Instructions

Blend the dates and carrots in a blender, add the chia seeds, coconut flakes, cinnamon, nutmeg, and salt, and blend a bit more until combined. Lastly, add the walnuts and blend to your desired texture – I like it when there are still pieces of nuts in the candy. That's it! Now, roll the candies in dry coconut flakes or sesame – I like both options.
