My Favorite Banana cake Recipe

This is the perfect recipe to satisfy those comfort food cravings while you stay at home. This banana cake is so simple and delicious – it's light, fluffy, and moist and the best part is it takes really fast! It's perfect for hunting for that sweet hit but you can't be bothered to take ages working out a complex recipe.

Why do I love this recipe? Firstly - as I said - the cake turns out to be sooooo delicious. Secondly, it is without eggs and animal fats. And thirdly - no long washing of dishes!

My Favorite Banana cake Recipe

Yield: 12 pieces

Ingredients

Dought for cake:

  • 290 gr flour

  • 1 tsp soda

  • 1 tsp cinnamon

  • a pinch of salt

  • 320 gr bananas (or 3 medium)

  • 210 gr sugar

  • 70 ml oil

  • 70 gr nut butter (I like to add peanut butter)

  • 90 ml orange juice + zest

  • 1 tbsp vinegar

  • vanilla

Decoration

  • almond petals and chocolate drops

Instructions

The more ripe the bananas are, the better.

Preheat the oven to 170C. Form 25*25cm.

Sift dry ingredients (flour, soda, cinnamon, salt) together.

Bananas, sugar, vanilla, orange juice, zest, and vinegar - grind with an immersion blender into a homogeneous mass (or even with a fork).

Add oil and nut paste to the banana mixture, and combine with a whisk.

Substitutions If you decide to replace the nut paste with sunflower/olive oil - then you have to add 40 gr of oil instead of 70 gr of nut paste). If you want to use butter instead of nut past - just use it at room temperature in 1 to 1 proportion.

Mix the flour part and the banana with a SPATULA.

Bake, depending on the size of your mold, for about 35 (+ -7) minutes (if you bake the dough in a small mold (10x25 cm) and it lies in a "thick layer", then the baking time should be increased, if you poured the dough onto a baking sheet 40x40 cm - then reduce backing time ❤️ ). Check readiness - on a dry toothpick.

I had a large baking sheet (25x25 cm) and my thin cake was baked in 28 minutes.
