  • 250 ml kefir

  • 1 egg

  • 1 tbsp sugar

  • a pinch of salt

  • 230 gr flour

  • 1/2 tsp soda

  • vegetable oil for frying

Instructions

So, the secrets of the secrets:

  1. We warm sour milk. I do this in the microwave on the "defrost" mode until the state - when I feel warm with my fingers.

You can warm it in a water bath or just take out sour milk in advance and leave it on the table. Sour milk must be MINIMUM at room temperature.

If you have warmed and overheated, do not be discouraged - even the resulting curd will not prevent your pancakes from becoming delicious.

This is the main secret (I went with trump cards!).

If the dough is cold - it is highly likely that immediately after you remove the pancakes from the pan - it will become thin and SAD! it was so?!

  1. The next point: for those who measure with GLASSES and for those who just read the text: there should be ALMOST as much flour as sour milk! Just a little less.

The dough will be thick. It falls off the spoon frankly LAZY - I EVEN remove the dough from the spoon into the pan with the second spoon - to speed up the process!

In order not to stand for half an hour and not shake the spoon over the pan.

  1. secret number LAST: add soda to the dough last, stir until a homogeneous consistency, and do not interfere with the dough anymore!!

AT ALL! Do you hear me!? I am not joking!

For every pancake, we chip off pieces of dough with a spoon from the edge - gradually moving inside the bowl!
